Red Lentil Pasta Primavera (gf + v)

I asked you guys what kinds of posts you're most interested in seeing on my blog and it turns out healthy recipes is the winner! I've already brainstormed a bunch of tasty, healthy recipes to test out in the next few months so stay posted for more recipes coming your way!


If you haven't tried red lentil pasta, it's time! Red lentil pasta has a very similar consistency and taste to traditional pasta, with loadsss more protein. The only ingredient is red lentil flour which is wonderful because you don't have to worry about any preservatives or weird additives that you can't recognize.


Red Lentil Pasta Primavera is a great recipe for a lazy Sunday night when you need an easy, breezy dinner to make! I hope this pasta recipe fills you up healthy comfort food after a long weekend. And hopefully you'll have leftovers to pack for lunch the next day as well! This recipe is really easy to customize and you can use up any vegetables that have been growing old in the fridge begging you to use them up! This recipe is vegan, vegetarian, and gluten-free! Holla!!




Red Lentil Pasta Primavera


Ingredients:

- red lentil pasta (I found mine at Aldi)

- extra virgin olive oil

- 3-4 whole carrots

- 1 bell pepper

- 2 small zucchinis

- any other assorted vegetables you like

- salt, black pepper, red pepper flakes

- a little fresh parmesan (or the shaky kind because I'm sure everybody has that at home already haha)


Instructions:

1. Preheat your oven to 375 or 400 degrees F. Wash and prep your veggies.

2. Chop up your vegetables and drizzle with 1-2 spoonfuls of olive oil.

3. I suggest roasting the carrots and bell peppers for at least 15 minutes before adding the zucchini to your baking sheet. I like my zucchini to have a bit of firmness after roasting and not just be totally squishy haha. (If you don't want to do it this way, you could also just use more than one baking sheet and separate your types of veggies so you can pull out them one by one once they're ready if that makes sense.)

4. When your vegetables are almost ready, have a pot of salted water boiling and cook red lentil pasta according to the instructions on the box. Strain pasta.

5. Serve this protein packed pasta and good for you veggies in a dish and drizzle with olive oil. You can also add a little butter. (You can skip the butter if you're vegan or use a substitute!) Sprinkle on any salt, pepper, red pepper flakes, parm or any other seasoning you enjoy.
